These instructions should hardly count as a recipe! There is plenty of room for customizing this soup to fit your tastes. And then once it's made, you can add in whatever veggies or protein to make an even heartier meal. Start by chopping your zucchini into 1" cubes. You can scoop out the seeds or leave them in, whatever you prefer. Saute the zucchini until it is cooked, then put it in the blender with enough water to puree it completely. In your pot, add curry paste, stock or bone broth, and coconut milk. These are all rough estimates, but 1 can of coconut milk and 2-4 cups of stock is usually good to start with. I prefer a creamy soup, so I use coconut cream or two cans of coconut milk. This is the base soup, and the soup I have for sale at the Orchard Homes Winter Farmers Markets. While it is delicious on its own, adding in a few veggies and a protein makes this a wonderful winter meal. ADD-INS FOR THE PERFECT MEALThis is a great way to use up leftovers, and your odds and ends veggies. PROTEIN
Cook your protein in a separate skillet before adding it into the soup pot. If you're adding leftovers (like the rotisserie chicken) you can just add them right to the pot.
VEGETABLES You can saute your veggies in a separate skillet, or simply add to the pot to cook. Everyone has a preferred taste and texture, do what you like!
GARNISH Cilantro or green onions on top, and a squeeze of lime juice adds a nice finishing touch to this dish! Let me know what your favorite add ins are!
